It’s cold, dark and busy during these winter months. Spice things up by having a taco night with friends and family!

As I’ve said before, casseroles and crock-pots will become your best friends. This crock-pot recipe is truly cause for a celebration. Preparing the chicken is easy (after all this is a BGM), but the presentation does require a little extra work. That’s why you have me here, to show you how to throw a mini fiesta to break-up the monotony in your work week. First things first, get that Fiesta Crock-Pot Chicken cooking…

Fiesta Crock-Pot Chicken

  • 1 1/2 lbs or 6 chicken breast
  • 12 oz of Mexican beer
  • 1/2 cup lime juice
  • 1 packet of taco seasoning


  1. Place cleaned and trimmed chicken in the crock-pot.
  2. In a small bowl, combine beer, lime juice, and taco seasoning – pour combination in crock-pot, making sure to cover chicken.
  3. Place lid on crock-pot – cook on either low for eight hours or high for four hours.
  4. Once down cooking, use two forks to shred chicken in the crock-pot – stir shredded chicken to distribute seasonings.
  5. Serve with tortillas and toppings.

Create an array of options as far as tortillas and toppings go. I recommend laying out hard and soft tortillas, salsa, guacamole, sour cream, lettuce, cilantro, black olives, black beans, jalapeños, Mexican cheese, and Spanish rice.

Now, what’s a fiesta without margaritas? If you ask me, it’s not really a party without these novelty drinks. Since we’re following the “easy recipe” theme, these easy margaritas are quite simple to concoct. Once the chicken’s shredded and the toppings are prepared, get a pitcher out and whip up this bonus BGM recipe!

Easy Margaritas

  • 12 oz can of frozen limeade
  • 12 oz of tequila
  • 12 oz of Mexican beer
  • 24 oz of water
  • Limes


  1. Slice limes.
  2. Place all ingredients, with ice, in a pitcher – stir to combine.
  3. Serve in margarita glasses with salted rims and a lime wedge.

What’s one last thing to compliment your BGM Taco Night you ask? Desserts of course! I added a platter of Spanish cookies to the already stocked taco bar. These cookies can be found in your local grocery store or, if you’re feeling really ambitious, you can bake Spanish cookies yourself.
